 A healthyalternative to beef burgers. Vegetarian and delicious!2-3 tablespoonsolive oil for frying1/2 onion,finely chopped1 garlic clove,minced2 carrots,peeled and shredded1/4 cup freshfinely chopped spinach1/4 cup peassea or koshersalt and fresh black pepper1 can whitebeans, drained and rinsed1 tablespoonfresh lime juice1/4 cupseasoned bread crumbs1 egg, beaten3 whole grainsoft buns, for servingHeat olive oilin a large skillet over medium low heat and saute onion until translucent, add garlic, saute until fragrant, add carrot and S&P - sautefor another 4 to 5 minutes. In a large mixing bowl mash the beans andpeas with a fork leaving them a little chunky. Add spinach, lime juice, bread crumbs, egg and sauteed vegetablemixture. Season well with salt and pepper. Usea fork to mix well. Refrigerate 1/2 – 1 hour. In a large skillet heatenough oil to generously cover bottom of pan over medium heat.Shape into 3 equal-sized patties. Fry forabout 5 minutes on each side or until browned. We topped our burgers withspicycheese and tomato - yum!
